Banana cupcake/loaf
I make this almost once or twice every month. Thanks to my kids who do not eat fruits or vegetables and I end up with a bunch of rotten bananas. The more rotten they are,better the flavor and aroma. This usually makes 12 cupcakes and a loaf.....takes about 15 min to prepare besides the cooking time.
Ingredients: Self raising flour-2.5cup
Light brown sugar-1.25cup
Cinnamon powder-1tsp
Salt-pinch.
Oil-half cup
4bananas-mashed
2eggs
Vanilla essence-1tsp
Milk-half cup
Method: 1. Get your first kid to assemble the first four dry ingredients in a large bowl.
2. Get your second kid to mix the wet ingredients with hand mixer about a minute.
3. If you are lucky enough to have a third kid, then get her to mix the above two,do not over mix.
4. Add half the batter in loaf pan.....top it with pecan or walnuts. Rest in the cupcake pan.
5. In a preheated oven at 180 degrees, cupcake will take 20 min and loaf about 40 min. I promise you,it will disappear sooner than expected!
