Undhiyu-easy and tasty way


I have started this blog for my own benefit. Since I modify the age-old recipes to suit my taste and time.....I need a place to store the modifications.
I have been shying away from this recipe coz it takes a long time until I found the easy way to make my favourite.
Ingredients: 
Available vegetables like potato, sweet potato, brinjal , yam, papdi/mange tout , lilva tuvar/peas
A bunch of coriander leaves
Greenchillis-8
Ginger -1"chunk
 garlic-6-7 cloves
Spices-coriander, chilli, garam masala, salt....1 tsp each
Grated coconut-half coconut
Frozen Peas- handful, roughly mashed
Sugar-1tsp
Sesame seeds -1tbsp
Lemon juice-1-2tbsp
Ajwain-1tsp
Hing/asafoetida -half tsp
Oil
Muthiya

Method:
1.Get your partner to cut the vegetables into chunky pieces, in the meantime make a paste of Ginger garlic & greenchilli and half a bunch of coriander leaves. Marinate the vegetables in this paste.
2.Next combine coconut, rest of the chopped coriander leaves , the spices, sugar,sesame seed,handful of roughly mashed peas , salt and lemon juice.
3. Take a wide pan or pressure cooker, add oil, ajwain and hing. When they splutter, add the marinated vegetables. Fry for a few min. Then add the mixture in step 2.
4. Mix and add a cup of water and cook on low flame for 30min.
If you have time you can add muthiya too.
5. Serve with puri or chappathi....I prefer on it's own.
