When I was making kulfi ,I thought thhe mixture tasted just like rasmalai and had the same consistency. If you can get the same taste without boiling the milk for hours then thats a winner for me. The next task was to find an easy recipe for the Malai (chunky bit of Rasmalai). Either add squeezed rasgulla or a patty made with ricotta and sugar. If the ingredients are right then how can the recipe go wrong.
Ingredients:
Ricotta cheese-2 lbs
Sugar-half cup
condensed milk,evaporated milk,double cream-equal amount each
cardamom-8,powdered
saffron-a pinch
pistachio-for garnishing
Method:
For Malai
1.Mix ricotta and sugar and little cardamom powder. Blend it well with a spoon for about 3 min.2.Put them in a muffin pan and bake at 350 degrees for 35 min or untill it sets. Make sure it does not get brown
3. Let it cool and place them at room temperature.
For Ras
1. Blend condensed milk,evaporated milk and double cream with a handmixer for 15 sec.
2. Add the cardamom powder and saffron .
3.Pour over the malai and garnish with pistachio.
