Mor curry/kadhi(kerala style)
Whenever I get bored with eating sambaar and rice ,this is the variation I usually try. It goes very well with fish fry ,or fried veg and pickle. If pumpkins are not available ,I use butternut squash, it doesnt make any difference in taste.
Ingredients:
pumpkin /butternut squash-2cups,chopped
Ash gourd - 1 cup (optional)
Tomato-2
spices-1/4 tsp turmeric,half tsp chilli powder,salt
To be ground: half coconut,cumin seeds 1tsp,greenchilli 3
Tadka-oil,1/4 tsp methi seeds, 4whole red chilli,curry leaves,1 tsp mustard seeds
Yoghurt-2 cups,beaten lightly with afork,so that its not lumpy.....but smooth
Method:
1.In saucepan cook pumpkin/butternut squash with salt turmeric and chilli powder. When soft,add tomatoes and stir.
2. Next add the ground coconut mixture and mix for 5 min.
3. Add the yoghurt. mix and let it just heat through nad turn it off.
4. lastly add tadka.
Serve with rice, pickle and fish fry.
