This is one of my favourite recipes. All my friends who came over when they were pregnant would have had it coz its high in iron content and very healthy. It does not have any spices yet its full of natural flavour. I prefer frozen chopped spinach, which is thawed as it saves a lot of time and effort.
cooked rice-3 cups
1 bunch spinach or frozen spinach
1 tbsp kasoori methi -not optional
1 large onion, chopped

1 tsp minced garlic
3 green chillies

8-10 kadipatta/curry
leaves
1 tsp cumin seeds
1 tsp cumin seeds

tsp aesofotida,
1 tsp
vinegar
1 tbsp oil, salt to
taste
southern fried potato chips/Masala fries /potato waffle-chopped in bite size pieces-optional
1.In oil, add cumin and asafoetida, slit green chillis and curry leaves.
2. When it splutters add onion and garlic and fry till onion is pink and soft
3. Add the spinach and stir till its cooked. Add salt, kasoori methi and vinegar.
4.Mix in the rice well and top it with potatoes. S erve with yoghurt and pickle or enjoy on its own
