Redmi/Aloo Paratha


I last had Redmi about 15 years back made by our neighbour,Jolly aunty and it has an unforgettable taste. It is like aloo paratha but without onions and ginger or garlic. If you are planning to make aloo paratha then why not try Redmi for a change , it is a 100 times better . I took the recipe from aunty this morning so that I dont miss out any ingredients.
Ingredients:
Plain flour-4 cups (with whole meal flour the potatoes may come out on rolling!)
oil- 1 tbsp, salt
water - for kneading
For filling: 4 large potatoes, boiled and mashed without lumps
                1 bunch finely chopped coriander leaves
                 Green chilli-4, finely chopped
                 lemon juice- 1 lemon
                 garam masala-half tsp
                 cumin seeds-1tsp
                 salt
Method:
1. Knead the plain flour adding oil and salt and warm water into a dough.( I did add a cup of whole meal flour to make it healthy.)
2.Combine all the ingredients for the filling till its nice and smooth.
3. Make 2 same size balls of dough and filling.
4. Roll the dough and put the filling in and bring up the sides and roll it lightly like for stuffed paratha. If you have used plain flour stuffing wont come out.
5. Cook on a tava adding oil and serve it with pickle and yoghurt or dahi tadka.
