Veg Fajita-Indian style


I had the best mixed vegetable subzi at Aparna's house and the only thing she did different was sauteeing the cauliflower. Since its a weekend, I decided I shall make the mixed veg sauteeing all the vegetables and make fajitas. The leftover vegetables can be used as a side dish with chappathi or rice or in a grilled sandwich.
Ingredients:
Potato-4, cut in long pieces
Carrots-3, cut in long pieces
Cauliflower/broccoli florets-1 cup
Peas-1 cup
sweet pepper-1, julienned
Onion- 2 large, thinly sliced
Green chilli-3,chopped
garlic paste-2 tsp
Tomato-3, chopped
Spices-2 tsp coriander powder,1 tsp chilli powder, 1/4 tsp garam masala. 1/4 tsp turmeric,salt
Cumin seeds-1tsp
oil
Tortilla/chappathi
Dressing- guacomole/sour cream/salsa +lettuce (optional)
Method:
1. In 2-3 tbsp oil, sautee potatoes, carrot and cauliflower till it turns lightly brown at edges, about 7-8 min. Now add the sweet pepper and peas and sautee for 2 min, to maintain the crunch. Keep them aside.
2.In the remaining oil, add the cumin seeds and when it splutters add the onion till it turns brownish.
3.Now add the garlic paste, fry for few min and add the tomatoes and mix for 2-3 min.
4. Add all the spices and mix them for 2-3 min till nice aroma comes and then add the sauteed vegetables.
5. Mix it all well and simmer for 5 min or till the potatoes are done.
6.In a warm tortilla, place a lettuce, if you want and the mixed vegetable and dressing of your choice. Roll it and enjoy.
Since the mixed veg already has tomatoes, I dint add any salsa . The dressing makes it palatable especially for kids.
