Graham cracker sandwich


 When I went to US, I got a few boxes of graham crackers. This recipe is a very easy "make your own"dessert for any party. I usually order cake mixes (Duncan Hines) from amazon and now plan to order graham crackers too due to its versatility in use like for making cookies, cheese cake base and chocolate eclair cake
Ingredients :
 graham crackers
Peanut butter Filling/Icing
butter-1/2 cup , softened
 powdered sugar-4 cups
 light cream-3-4 Tbsp.
1 tsp. vanilla
 pinch of salt
1/2 cup peanut butter

 Method:
1.Place the butter and about 1 cup of the powdered sugar in a mixing bowl, and beat with an electric mixer until light and fluffy.
2.Add the cream and remaining powdered sugar alternately in batches, beating well after each addition, until the frosting is smooth and creamy. Beat in the vanilla and salt.
3. Now add the peanut butter, and beat until fluffy. 
4. Spread a generous amount of the peanut butter frosting on one graham cracker. Top with another, and squeeze gently to make a sandwich. Let the party guests make their own sandwiches.
 Eat the graham cracker sandwich cookies right away or let them stand for a few hours. They'll become nice and soft as they absorb the moisture from the frosting.
Tip:This peanut butter frosting would be great on chocolate cupcakes
