Vada -Pav


I call it the Indian burger for those who have never heard about it. Its the most popular Mumbai street food which is bursting with different flavours from hot, sweet, tangy, fresh to many more. If you have the chutneys at hand readymade or homemade then its easy to make.
Ingredients:
Potatoes-4 large, boiled and mashed
To be ground: 1"ginger,4 garlic clove, 5 green chillis
Coriander leaves-half cup, chopped
whole coriander seeds- Roasted, 1 tsp, coarsely smashed( optional)
Seasoning-1 tsp mustard seeds, few curry leaves, 1/4 tsp turmeric powder

Gram flour (besan)-2 cup
Rice flour-2tbsp
spices- 1 tsp chilli powder, 1/4tsp turmeric powder, 1 tsp ajwain/thyme
Soda bicarb- apinch
oil for frying,
salt
Pav or bread rolls or buns
Chutneys- garlic, coraiander and tamarind chutneys
Method:


1. Grind ginger, garlic and green chilies together into a paste.

2. Peel and smash potatoes with a potato masher . Do not smash completely. Let some small chunks remain.

3. Add ginger, garlic and green chili paste, coriander leaves, and salt to the potatoes.

Then take 2 teaspoons oil in a kadai. Add mustard seeds. When they splutter, add turmeric powder and curry leaves.
Pour this tempering on the mashed potatoes and mix gently. .

5. Make small balls of mashed potato mixture.

6. Add some salt,ajwain, turmeric powder and chili powder to the gram flour and rice flour . Add water gradually and keep mixing with a spoon. Remove lumps if any. The batter should not be too watery or too thick.Add soda bicarb when ready for frying.

7. Heat some oil in a pan for deep frying.

8. Now dip each ball in the batter, deep fry all the vadas until golden. Remove on a paper towel and drain. Batata Vadas are ready.

9. For Vada Pav, split Pav keeping the base intact & spread garlic chutney , tamarind chutney,coriander chutney on the inner surfaces of it. Place the vada in it. Serve hot.

  2. Its been my lunch ,snack and dinner. .......today I had one from shop in Leicester too to compare the taste, they just used a tangy chilli sauce.......that tasted fine too. A chiilli garlic sauce.....may taste ok if no chutneys available.
