I used to make aloo tikki for my veg burger about 15 years back. Now everytime I make choley I prefer to have it along with aloo tikki chaat or samosa chaat. It is quite easy to make and in fact you could serve aloo tikki on its own as an appetiser too.
Ingredients:
For aloo tikki-
Potato-5, large boiled
Bread -4 slices
Green chillis-3, chopped fine
Coriander leaves- 4 tbsp. chopped fine
Cumin seeds-1tsp
Spices- 1 tsp each of chilli powder, cumin powder, coriander powder, chaat masala & half tsp garam masala
Salt
Oil- Little for shallow frying
For Chaat-
Choley
Tamarind Chutney- 1 tbsp
Onion- 2 tbsp , chopped
Coriander leaves-2 tbsp, chopped
Papdi/ jacobs cracker- 1-2, broken into samall pieces (optional)
Yoghurt- 2 tbsp sprinlked with a pinch of salt, cumin powder and paprika
Sev-2tbsp
Method:
1. Mash the boiled potatoes. Take each bread slice , dip it in water for a second and squeeze ot all the water and it to the mashed potatoes.
2. Add the remaining ingredients upto and including salt. Mix it all well with your hand. If its too we then can add cornflour or bread crumbs. I did not have to add any.
3. Shape them into patties and shallow fry on both sides with liitle oil in a non stick pan till its golden brown .
4. To serve as a chaat, take some choley , about half a cup in a bowl. Add 2 aloo tikki. Put spiced yoghurt, crackers and sprinkle onion , coriander leaves and sev .
Tip: You could freeze remaining cooked aloo tikkis and when you need it oven cook at 180C for 18-20 min from frozen.
