Lettuce Raita


I had carrot and cucumber raita at the cooks forum meet made by Radha ben and this raita is inspired by that. Since lettuce is not commonly grown in India ,so I assume its not been used for raitas. But the crunch and the sweetness make it an  ideal accompaniment to pulao or biryani n the form of raita/yoghurt salad.
Ingredients:
Lettuce-1.5 cup, chopped
Yoghurt-1 cup
Roasted peanuts-2 tbsp, crushed
Sugar- 1 tsp (optional)
Salt
For tadka- 2tsp oil, 1 tsp cumin seeds, apinch of asafoetida, 2 green chillis chopped
Method:
1.Combine chopped lettuce, yoghurt, peanuts, salt and sugar.
2.In 2 tsp oil add the ingredients for tadka and when it splutters , pour it over lettuce and yoghurt mixture.
3. Mix and serve with pulao or biryani.
Tip: You could add grated carrot  cucumber or chopped onion if desired.
