Paneer and pesto

I had made paneer tikka masala for kids from a readymade tikka masala gravy but they totally rejected it. I have cheated them in the past with readymade gravies but this time I used a different brand. But I did not want to waste 500gms of paneer so I fished them out, washed all the gravy around it with boiling hot water and made this great appetiser. It is inspired by Rekha's blog and my Paneer starter and with the leftover gravy I might just make a chappathi with it. I hate to waste food but sometimes if recycling is not too time consuming then that seems to be my favourite option.
Ingredients:
Paneer-500gms, cut in bitesize pieces
Basil pesto-2-3 tbsp
Yoghurt-1tbsp
Onion seeds-1 tsp (optional)
Salt and pepper- according to taste
Olive oil-1 tsp
Method:
1. Marinate the paneer in pesto, yoghurt, salt and pepper for atleast 30 min.
2. In a non-stick shallow pan take a tsp of oil , add the onion seeds when it sizzles add the marinated paneer . Cook untill  it turns brownish on both sides , takes about 5-10 min.
Serve it as an appetiser.

  1. I too hate wasting food and keep thinking of ways to recycle stuff. This recipe too looks good. I am sure your kids must have loved it :-)
