Manjula's Masala Bhaath
I made this Masala rice yesterday for friends and it was very well recieved. The unusual selection of vegetables imparts a special taste and it tastes as good as or even better than biryani. It was worth making a trip to Leicester for tondli.
Ingredients:
Basmati rice-1 cup
Vegetables-1 potato, 1 tomato, 2 brinjals, 5 tondli, handful of peas
Onion-1large, chopped
Ginger garlic paste-1 tsp
Green chilli-coriander leaves paste-1 tbsp (10 sprigs of coriander +3 green chillis)
Grated coconut-1tbsp
Garam masala-1 tsp
Mint leaves-5-10
Seasoning- oil, bay leaf, 1"cinnamon stick, 3 cardamom, 3 cloves
Salt
Method:
1. Chop all the vegetables and assemble the ingredients.
2. In little oil, add the seasoning ingredients and when it sizzles add the chopped onion and saute till brown.
3 Add the ginger garlic paste and fry for a minute. Add all the vegetables including the tomato and the green chilli-coriander paste, salt and grated coconut. Saute all in high flame for 5 minutes.
4. Add rice , mix and add 1.5 cup of water. Bring it to boil.
5. Add the mint leaves and garam masala . Simmer for 12-15 min, when it will be done.
Alternatively you could transfer the contents to rice cooker in step4. Serve it hot with raita and papad.

Hi naveena this is delightful taste and with brinjal it makes it even better. we make it slight differnt but nevertheless taste is yummy
